Ingredients

1 TBSP Smart Balance Spread

3 oz lobster claw meat, cooked

2 eggs

1/4 cup Sargento 4 cheese Mexican cheese

Directions

Heat spread in skillet til melted. Heat lobster meat through, push to side of pan or take out of pan while cooking eggs.

Scramble 2 eggs in bowl and pour into pan. moving pan side to side to spread eggs out thinly. When eggs start to cook through, put lobster on one side and cover with the other side. Sprinkle cheese on top and heat a few more minutes until cheese starts to melt. (Lowtat cheese does not melt as quickly as full fat cheese, and nonfat cheese doesn't really melt at all.) Slide from pan to plate and serve with hot sauce if desired.

Cast Iron Maiden
So I followed the cbx advice on spinach and eggs and decided to give it a spin. Here was today's breakfast that won a 'Thumbs Up', 'Very Good' and a gratuitous plate lick from Tobfu. Here goes: for 2.
2 English Muffins, toasted
3 eggs fried, mixed in pan
3 white button mushrooms, sliced, sauteed...don't crowd.
handful of frozen spinach, heated on low
A few slices of soft cheese
I used my Cast Iron Pans, of course, for optimum flavor. Just fry it all up and slap it together. ;) For a little extra heat, dash on some hot sauce. Very quick, easy, filling and nutritious.

Yeah for the egg! I think they have gotten a bad rap over the year, but I have always be loyal, never seperated, (except when recipe called for.) It's a perfect form of protein. I use one in my smoothie instead of protein power. It also make it light and fluffy.

Yo Chica! Since last weeks' 'to yolk or not to yolk', you've got me craving eggs. So, of course I got some this weekend. Going to try a new type of Egg Sandwich tomorrow a.m. I'll let you know how it turns out. Eggs with Lobster...now that sounds sinfully delish!

Hey Ange,

Great group and sweet avatar too. I agree with the whole egg thing its sort of like a triad meal.... you cant have one part with out the other.... well except the shell of course so I guess it like a duality... well its hard to explain.... but some how you cant have one part without the other.... okay I understand completely!!! Monday is egg day for me I'll post my recipe tomorrow for all you eggaterians.
